I know, it’s a strange business. There are times in your life that you will use a caterer once, maybe never, or maybe you use them allot for entertaining, or corporate events. This should be your very first question and ask for proof, look at the document; right before you ask to come and meet them at their place of business. It is very often that you will find they are legal, and have the proper licensing in place. You must be your own investigator.
On the other hand, I have heard horror stories of people cooking in their personal home kitchens, with cats on the counters, backed up kitchen sinks, or barely working refrigeration.
